When I first met my husband he subsisted on deli turkey, boiled broccoli and canned peaches. Okay, that’s a little dramatic, but he did love his canned peaches.
Still a running joke between us today, I thought these slow-roasted organic peaches with crushed lavender buds and organic honey might take him back to the good ole’ days — with a little twist to satisfy the food-obsessed man he is today.
- 2-3 organic peaches, sliced
- 2 pinches gently crushed lavender buds
- 1 tablespoon organic honey
- 1 tablespoon filtered water
Combine all ingredients in an oven-safe dish and roast in a 350° oven for 20-30 minutes, or until soft and lightly caramelized.
Serve warm over ice cream or over Greek yogurt for a healthy breakfast. Drizzle some of the residual peach-honey juice over top.
