The Mighty Maitake Mushroom

Also commonly referred to as “hen of the woods”, the maitake falls into the medicinal (and wild) mushroom category for its phenomenal healing potential.  The maitake contains a compound known to lower cancer risk, promote immune function, ward off viruses and bacteria, alleviate allergies and support the body’s natural detox mechanisms.

They’re also prized for their incredible woodsy and delicate flavor.

To retain the most of this immune-building powerhouse, cook maitake mushrooms quickly over medium-high heat in a sauté pan with olive oil and a few whole cloves of garlic until golden on the edges.  Remove from pan and season with sea salt and pepper, to taste.

If you can’t find maitake mushrooms, shiitake mushrooms are a very good subsitute also known to contain a significant amount of powerful antioxidants, to invigorate the immune system and promote optimal health.

I just cooked maitake in a stir fry and was now looking on twitter for people talking about them and came across your blog.
